I just did a maple bourbon ham for New Years that was the best I have ever tasted. It was posted here by John 3198, he added the recipe later in the thread. I would highly recommend it.

Don't have a thought of something to make yet if I jump in on this but I did want to say I love the new way of putting it at the top of the active thread page. It draws attention to it which will bring more interest. So props to whoever thought of it.

Recently (Dec. 21st) my daughter had her 15th birthday. So she wanted to go to Famous Dave's for her birthday. I asked why there, I can smoke something here if that's what she wants, but no she wanted Famous Daves. She said she like the atmosphere and not to hurt...

I will say that I always thought smoking folks to be secretive with recipes and methods. This couldn't be farther from the truth here. People here are almost begging to help others. I have learned so much and know I have so...
1. Talk BBQEng's wife into allowing him to build me an "Iron Maiden".
2. Buy some land near Cowgirl. So we can go over for some neighborhood visits........say around dinner time.......LOL
3. Learn to cook a great brisket.
4. Learn to smoke some salmon.
5. Try to become half the smoker...
You will be forgiven, but only once, the next time you will have lashes coming for Qview failure. LOL
Sounds like things went well on the pellet pooper, we are very fond of our as well.
I only have the Lil Texas but can say the blanket technique does help some with the heat but not as much as I expected. The cold air being pulled into the smoker is the killer of the temp. I have a couple ideas I am going to try to see if I can heat the air before going into the smoker and see...
I will venture to say you will find plenty of things you will be trying from the great BBQers here and be firing up your pit a lot more in the near future.
