    Wow, not only does that sound delicious, but the presentation and plating of the dish is magazine-worthy! So, I take it that you are really starting to like the Hasty-Bake?

    Makin' Bacon...Buckboard and Canadian!

    Started with half a loin - trimmed - for the Canadian Bacon (about 4lbs), and a half a boneless Butt for the buckboard (7lbs).  Used Hi-Mountain cure and let them sit in the fridge for 12 days in vacuum bags. Ran for 30 minutes with no smoke at 150º then bumped to 175º and added oak and...

    Another FL boy

    Welcome, Neighbor,  Glad to have you on board! Congrats on the Lang... I've been watching the Tampa Area Craigslist, not sure how that one slipped by, but good grab!  Hope to see lots of good smoke (we love Q-View) coming soon out of your new toy.

    Smoked Southwestern Chicken & Rice finished in Dutch Oven: Q-view, recipes, method & a few tips alon

    Awesome tutorial and great looking meal.  I rarely use my DO except when camping and I think you just inspired me to break it back out. Thanks for the clear explanation of the rice, too.  Very helpful and informative. Super job!

    Local Butcher---> Good thing

    It's not that there aren't any butcher shops, and yes, the grocery stores will do a special cut for you, but they are mostly "meat cutters" and not overly knowledgeable or helpful.  And like I said, not worth the extra drive or cost to buy from them. What I am talking about is the kind of guy...

    Won 3rd place at local chili cook off this weekend

    Looks great.  How much time did they give you before judging?  Were you allowed to prep anything ahead of time or did you have to do it all on site?

    Local Butcher---> Good thing

    I think there is just a dearth of local butchers in Florida.  Nothing near me either - at least, not anyone with any real knowledge or that has given me a reason to drive extra to them for services.  They are a dying breed what with grocery stores on every corner.  You should consider yourself...

    pricing guide

    Just something else to remember... not to be a naysayer, but the minute you start charging, you open up a whole can of worms. If heaven forbid your smoker starts a fire on your property  (say, an errant ember floats into your rain gutter and catches some old leaves....)  and you've been...

    Smoked my first Chuck Roast.....

    You shouldn't have any problems doing a Chuck roast at 250º, and you would be surprised how much of a time difference that extra 25º makes.   Just as a side note, I know everyone loves spraying apple juice, but I am an advocate of apple cider vinegar instead.  Try it next time and see what you...

    Some Reverse Seared Ribeyes .... on my new toy. :)

    Interesting looking toy, and GREAT looking dinner!  The sauce sounds amazing (love morels!) and grilled asparagus are some of my favorites. Did you get enough smoke flavor?  Was it even necessary (I know, that question is sacrilege!) based on the fact that you were searing and cooking over...

    2/20/11~Pulled Pork Bread (2 ways)

    Would you be willing to tell more about your dough recipe? I've tried this a few times with disappointing results.  The bread is always soggy on the bottom. Care to divulge your secret?  These look great!

    ABT using sweet peppers?

    If you can find them near you, try the sweet mini bell peppers.  They work great for ABT's! I buy them at the grocery store in a 2# bag.  Costco sells them in a 1.5# plastic tray It's a mix of red, yellow, and orange peppers that are about the size of a jalapeno, only they are sweet like bell...
