    Sirloin tip w/Qview

    USDA says 145º for Steaks and Roasts.  You'll probably get about 5º +/- of carry over if the roast has been on the heat for 4-1/2 hours like Al's.   Can't speak for anyone else, but I prefer my roasts  - especially the one's I'm slicing for sammiches - on the rare side. Here's the list...

    Simple (and delicious) Smoked Chuck

    Dry rubbed a small chuck steak with brown sugar, chili powder, onion powder, garlic, chipotle powder, CBP, and salt-fee montreal steak seasoning.  Wrapped in plastic and put in the fridge overnight, On the smoker @ 225 for about 4 hours, then wrapped in foil and allowed to rest of an hour...

    Welcome Gary! You'll find lots of really nice folk and plenty of helpful advice around here... not to mention some great recipes and tips and techniques. There's definitely a learning curve on the Smoke-N-Grill, but once you master it, you will be able to make just about anything you want...

    Had a Fattie going, so I threw on a split chicken for dinner: Paired with sweet cornbread pudding , a black bean and corn medley, and of course a side of my favorite home-made barbecue sauce. White meat or dark meat? Dinner is served~!
