    I agree with Unle Lar, Fat rules and an 80/20 ratio is what is needed in sausage. Have a few people that have tried to make them healthier by reducing fat and then not like the outcome. Good luck and have fun!

    Weekend Challenge---READ!

    Sticks asummer sausage.

    Helped a buddy mix and stuff some Pepperoni and hot sticks along with some summer sausage. All were made using elk and some pork butt. All were dried in the smoker for several hours and then "kissed" with some apple smoke. Had some of both the other night and they were very tastey.

    DrLouis I am with Ron, throw on another butt or two and another chuckie. We just did a party for 30 and found that our chicken prices were far les than our butt prices. Something to consider as chicken is a lot faster to cook and can be cheaper as well. Sounds like you got a lot of good food...
