Jjust found this post and have to try casings, never thought of it. I've always rolled and packed into netting then put on the rotisserie on the grill. Thanks for the info to all who responded. Don't mind the stutter,LOL.
Rather than chicken wire which is made of galvanized steel, why not go with the wire fenceing like stuff that they use to reinforce concrete. It's just steel and you could burn off any oils , it would be easier to work with and you'll be able to use it over and over. Just find a mason around...

I Can't believe you live down there and never heard of it? I use it in most my crab boils and crab and fish cakes. Try it you'll like it. I guess different parts of the country have their own thing.
Looks great. Thanks for the idea of the marinade and salad. I usually marinade in an oriental type and serve with rice. Yours will make a much needed change.
