    Chef IQ

Recently purchased the 3 probe model, on Palm Sunday I used them for a venison and lamb on the offset but didn't have opportunity to mess with them due to having a offset and the Kudu to maintain fires along with entertaining, yesterday I made 2 chickens on the gasser and was able to focus a bit...

    SnS or Primo XL

Having a BGE I certainly considered just getting a larger unit but wanted to try something different and a little more unique.

    SnS or Primo XL

Thanks for the input but I use the ceramic for baking and rely on it as my winter charcoal grill. I recently sold my box smoker so Im looking for something just big enough to facilitate smoking for the immediate family, small pork butt, try tip, a rack of ribs, meatloafs, 2 chickens, etc...

So I'm at point where I am putting my small BGE with custom table up for sale after 10plus years of use, I've made some changes in my lineup and now need a bigger ceramic cooker to do some smoking, a pork butt, rack of ribs, or tri tip for example, for the immediate family on occasion along with...

    First Big cook on 1975

I like it a lot and use it often, half sheet pans fit there nicely and its easy to get that top rack hot for items like mac and cheese. The chicken I did for the grad party I had too many pieces so it didn't allow the heat to circulate above the meat. I.ve since done pork belly and stuffed...

That's a good looking smoker, nice job. Looks like you have quite a shop to work in as well.

Brisket came out so-so, what to do with 3lbs of cubed brisket?

A favorite around here is brisket meat pie on the Egg. Problem is there're rarely any leftovers.

    Sous Vide Safety

Clostridium botulinum, Clostridium perfringens, Listeria monocytogenes, seems the instances are very rare. I plan on discussing it with him in more detail next opportunity.

    Sous Vide Safety

So for quite some time I've been reading and seeing the Sous Vide being used to reheat food, I'm aware of the other uses but reheating leftovers is what had peeked my interest. So I bring it up to my Brother, he's a successful executive chef thats been in the industry for 3 plus decades and he's...

    First Big cook on 1975

I'm very happy with it, after I ordered and was on waiting list I would read all the threads on whats currently available and being released waiting for the "one I should've or would've" bought and can say that I made the right choice, glad I opted for the second rack, the bigger smoker, and...

Ribs, first cook on the new 1975

Did some ribs on my new smoker, sorry for not having the plate pic. Very happy with the WH, first time using an offset in 10 years, and doing pork ribs which I don't do normally, was a little short on bbq sauce as well but they were good enough I'll be doing them more often so says the wife...

    Used Smoker Pricing

So I'm in process of selling a smoker, is there a role of thumb for price. I'm not able to find an example of same model being sold used. Want to get a fair price for me and the buyer so just hoping for a ballpark to start. A % of retail possibly as a baseline? Thanks in advance.

    Stuffed Peppers on the Egg

Did some stuffed peppers on the Egg. First time I've done a pan of sauce under the peppers, excellent flavor I'll expand on that in future cooks. Forgot to get pics of the fresh cut green beans.
