    Good Article on Jerky Safety

Thanks dirtsailor, I just came upon your post and I found it very informative.  I had just bought some Turkey breast to make some jerky with and this information will come in handy.

    Home Sick

I’ve been sick for the last week now it’s my wife’s turn. Neither of us feels like cooking dinner.  What to do?  Thankfully having a freezer full of smoked meat comes in handy.  Smoked chicken thighs, microwave baked potatoes, and a salad never tasted so good!

    Another Newbie

Hi Dave, The smoker that you have is a New Braunfels Black Diamond smoker.  I used to use one just like the one that you described.  I cooked a lot of good BBQ in it.  The only reason that I got rid of it was I outgrew it.  I now babysit a 48” X 24” offset RF smoker. Do a search query for “New...

    New from California

Hey neighbors, I live in Citrus Heights.  I didn’t know there were SMF people so close to me.  I’m an offset stick burner type of guy.  Right now I have too much smoked food and not enough freezer space.  Someday soon I would like to try cooking a brisket.

    Cleaning out my RF Smoker

Al, I finally figured how to put a nipple in the drain valve.  I attached a hose to it, and ran it under the fence out to the front yard.  I now have a clean smoker thanks to you.

    My Big Butt(s)

I pulled the butts off the smoker at 205 degrees.   They rested in a cooler for 90 minutes.  I then pulled them into a big pile of goodness.  If this don't make me right with the people at church nothing will.  (Just kidding)

    My Big Butt(s)

The church that I go to has a luncheon on the first Sunday of the month.  This month, I am cooking Pulled Pork.  It all starts with two pork butts prepped and ready for the smoker. I was up at 5 am to light the smoker.  It took an hour to bring the temperature up to 250 degrees.  After 3...

Need help with buying a Sous Vide Cooker

Thanks Al and thanks Xray for your input.  You both bring up valid points.  At this time I think I will pass on buying the HB.  Sometimes a good deal at Target isn’t too good to pass up.

Need help with buying a Sous Vide Cooker

Has anyone have any information on the Hamilton Beach Professional Sous Vide and 6 Quart Slow Cooker?  The Target that I work at has them on clearance for 50% off right now.  I have thought about trying Sous Vide cooking and this looks like my chance to get in the game at a good price.  Any...

This addiction is going to be expensive

I feel your pain.  I used to be a mild mannered weekend smoker until I came across this forum.  Now I am willing to try cooking almost anything.  This addiction can get expensive.  Already I’ve had to buy a vacuum sealer, meat slicer, a new digital scale, and a AMNPS smoke generator.  I can’t...

    Smoked coffee

I’ve never heard of smoked coffee before.  What does the added flavor of smoke taste like?  Can you smoke whole roasted beans?  I’m a serious coffee drinker and I would like to try this method sometime.

    Cranky Onion

Looks good.  The only problem that I have is, I don't have a brisket to cook.  I'm going to have to buy one.
