    Ribs are the only meat in cook by time not temp. I like a little tug so i tend to donthe 3 2 1 in about 3 1 1 or 3 1.5 .5. I recommend doing 3 2 1 then tweak to your liking.

    Well as I continue to re-educate myself to smoking after a few years of no smoker I decided on ribs. I was able to control the temps in the UDS a lot better today and may be close to knowing what I am doi Dinner plate, no fancy presentation, but oh so good. Thanks for looking

    Chimney Starters?

    I just started using one (weber) it does get hot, but not melt handle hot. I put just a little lump in it and when that turns white and flame is gone I dump it.

    I just used a homemade rub. I usually use Jeffs orginal rub and the packet that comes with the cornedbeef

    Well the smoked corn beef turned out very good even after a few new lessons on my UDS. After slicing wife grabbed a slice and said YUM. She then proceeded to keep taking slices. That is a ringing endorsement! Here are a few pictures

    Ninja Pizza

    That looks very good. Never used any air fryer before. I used to make pizza often and then my wife came up with a better dough recipe and now she makes them.
