Big cook with the Lang Fatboy

Thanks TB! Good catch with the color, you’re right. So, all I do is wrap based on color. So, naturally those that get a little darker get wrapped first and usually by the time those are wrapped the others are ready. Thank you Chop!

    Classic New Orleans style po-boys

Thanks everyone. Today’s leftovers are an exercise in gluttony. Leftover Italian sausage link, boars head pastrami, chisesi ham, Swiss, lettuce, pickles and a mayo-mustard mix. We may get iced in at work so I wanted to make sure I wouldn’t go hungry.

Now a GOOD fried oyster poboy is #1 for me if it’s a good one... fried properly and loaded with oysters. A bad one isn’t worth the bread it comes on.

    Venison Italian sausage

Week two of the post season processing is in the books. I now have just short of 50lbs of burger and 20lbs of Italian sausage links. Italian sausage is a staple here, so I had to have a decent amount of it before I started my specialty meats. This time I used the two guys and a cooler recipe...

I Am Declaring This A Disaster (Lotsa Pics)

This breaks my heart to read, and see. I am so sorry, Robert. I have unfortunately witnessed firsthand the devastation mother nature can bring. One of the first things that came to mind when seeing those beautiful trees damaged like that, was post Katrina on the Mississippi Gulf coast. As...
