    MES 40 Digital Rebuild

You are welcome to try to rebuild the 40 with new parts but be fore warned, they apparently don't exist, Somethings you might get from Masterbuilt, if you can contact them and wait long enough. The PID you can have in a few days and they answer their phones.

    Lift Bowl Kitchenaid

I bought a bowl lift for the wife's Christmas a few years ago. I never use it but every Christmas she makes cookies and a lot of them. She absolutely loves it. Had to get the small batch bowl, a bowl shield and a few other things too.

    PID/Smoker headache

I did not realize open loop had to be factory repaired. I thought it would just need to turn off and back on. Had to suspend that message for dinner, then family. Back at home now on my laptop. Dangedest thing, After taking the bird out (it was very good) and leaving it run while we were across...

    PID/Smoker headache

OK, I've messed this thread up a bit. I PM'd tallbm, chopsaw and zwiller to call their attention to the thread. They replied mostly in both places for public help and I have been a bit neglagent in that respect. I meant to but surprise I goofed...again. The following two posts will be my missing...

    PID/Smoker headache

I had wondered if the PID had a duty cycle of sorts for overheat reasons. That would explain a lot. I did notice I had no problem connecting to the unit for my daughters house, several miles away. The PID had a solid blue light anytime I checked it which I beleive means it had no issues...

    PID/Smoker headache

Dangedest thing, After taking the bird out (it was very good) and leaving it run while we were across town the temps recovered to the set 275 and stayed there. That's the nice thing about having the wifi model, I could monitor it the whole time we were away. If it had stayed at 100% power the...

    PID/Smoker headache

I have a MES 30 set up with an Auber AW-1520H-W PID (wifi model). So many things just not quite right this morning. I just don't have time to mess with it often so starting out the unit showed a solid blue light, indicating it was connected to wifi. But I opened the app on the phone and nothing...

    Fricken Ham

Hey Chop, look at the pkgs carefully. There should be a meat plant number, sometimes in the USDA seal. P-xxx or what ever. If the store brand was also made by Fricks, it will have the same plant number. The store people might tell you anything to avoid saying " I don't know ". Some folks are...

    Fricken Ham

Fricks does make a really good ham. They are made in a small town just outside St Louis. They are family owned and operated. My former head meat cutter went to school with the kids. The family name is actually pronounced with a long "I" like Frykes. It was so commonly mispronounced the daughter...

    New Bread Pan

Nice !! I never seen one like that. Honestly didn't look real hard. I looked up the Champion ones I keep seeing in vids and backed away when I saw the price. My dutch oven will suffice for now, until I get totally hooked on bread making. I can see the advantage of the design, just don't need the...

    Inconsistent Temperatures MES

If you get digital unit, you may or may not need a PID. If you want to do summer sausage and such, where you are flirting with temps where the fat melts off and runs out of the sausage, a PID can be a HUGE help. The problem being the temp overshoot inherent to most all heated appliances. Temp...

    Cheesy Chicken and Poblano Soup

You got me thinking. I'm not too familar with some of the ingredients or where to source them locally, mostly because I never looked for them. I tried looking at pinterest for something similar but everything just fell a little short. Now I gotta see what I need and where to get it. This is...

    Sourdough Bread Experiment

Wow, that looks so good. I watched a you tube of a guy who did much the same thing. I was skeptical of results being the vid had to be edited together (never know if the results were the same loaf). You, I trust ! That's one heck of a time savings right there. Time is the major reason I haven't...

    Cheesy Chicken and Poblano Soup

Good greif that sounds good ! I hope the published recipe scales well. I in no way need to make 7 Qts at one time. I'll be the only one eating it. I tend to make big batches of stuff and eat and eat till it's gone but 7 Qts is gonna take a minute.

    Mi Casa Chorizo Recipe

I've been looking for one similar to this. The recipe I have is merely a list of ingredients from the bag of seasoning. I remember nutmeg as an unusual ingredient and searched the web for a recipe that included the nutmeg. No luck. Yours also has cinnamon which is not on my list and I have...

Kitchen Essentials - must haves for a better experience

I have most of those and want the rest. Just no time to use them. I'm stocking up for retirement. I trying to get what I can before I retire. might not be able to afford them after. Nobody mentioned coffee maker, unless you consider that the basics. This house don't function without it. 2 pots a...

    Grits question

Same here. I was raised in Memphis 'til I was 13, then Mom re-married and dragged me to this land of Yankees. At least Missouri has rednecks and that's good enough. I do still occasionally get comments of "You actually eat that stuff ??" Or like the meme "what's a grit ??" Hog jowls were made...

    Grits question

Dang Inda, I have always just used water to cook my grits. The thought of using milk as well never occurred to me. Of course I add plenty of butter, salt and pepper. Gonna have to give that a shot. Dang it, now I'm hungry again !!
