    I agree with Tim, here's one I built out of a 1/8" piece of flat alumium with 3/4" holes. I was in a hurry to try it out and didn't finish reaming the last set of holes. I also made one with 1" holes.

    Dave there's nothing wrong with grilling, I grill all the time. There's nothing better then a really good GRILLED steak. Smoking is just another aspect of how to prepare meat. (I hope that was the right word). I must admit I do a lot more smoking then I do grilling right now. Welcome to the SMF...

    I'm not sure of the answer but I would think if you soak a pice of meat in water for a period of time it would lose it's flavor into the water. I've never heard of doing that. YECH!!!!

    Steve sorry I can't help you, I've used Hi Mountain cures a lot. Never had any yellow streaks. The first butt I did had a lot of gray ares's in it. I paniced askes a few questions, got a few answers, some of them said it could have been a reaction to the cure. Smoke it, ate it, loved it!!! Maybe...

    I tried no pan once, started to break apart. Now I either use one of them wok looking things with all the holes in it, or I just firm it up in a pan then take it out an put it on the rack.

    I kind of thought you would get a 50/50 on that question. I usualy go with the fat up, then half way through the smoke I turn it over.
