I'm not sure where to put this post, would I smoke these the same way as a chicken leg? They have been drying for 2 days now.

Wouldn't it be considered red meat? Might try a little smokie okie method. If you like skin it should be nice and crispy!

Throw on some of jeffs rub, wrap it and let them sit overnight!
