Wind from Saturday to Tuesday and maybe Wednesday 20-30mi/hr

I just ran a cal on the 4 digital probes i have. I took them all (4) and twist tie them together about 2/3 way up and "stirred" then in the boiling water got 206 on all of them.
Why 206 well i am at 3500ft..
most digital probes do not have a "adjustment" as they are control electronically.
Hay, when we would go to Amherst, to the butcher there, he would Vacuum Pack the meat for us using a commercial unit and it was better than the vacuum seal system for home use.

Well it started out on Friday 7 am and started the coals up. Using lump coal. OK good Nite before we made up Jef's Rub and rub the Butt with bone. IN the refrigerator for a rest.
About 7:45 butt into the smoker.. probes in and temp starting to register. closed the smoker down both input and out...

I may need something like that soon as the winds keep cooling of the BBQ's/smokers and it is hard to keep the heat up.

not to steel the thread but i also have a temp question. Butt has been on for 2 hrs and finally the temp is down to 230 or so. took almost closing both vents all the was to get there.
what do i need to regulate this thing.

Saw this one or one like it at HD kinda check it out appeared to have the best of both worlds. Coal on one side for smoking and Propane on the other.. lets us know how it works.
