    This should have been a poll.... very interesting... I always try to pull it but sometimes i can't find it and assume (LOL) the meat packer did it. I cut the bones into 1's so it would not make tooo much difference.

    I just ran a cal on the 4 digital probes i have. I took them all (4) and twist tie them together about 2/3 way up and "stirred" then in the boiling water got 206 on all of them. Why 206 well i am at 3500ft.. most digital probes do not have a "adjustment" as they are control electronically.
