Ancient Age Bourbon is just fine for this recipe. I remember drinking it down south when I was a fresh caught ranger and remember it to be quite smooth for "sippin"
So it will be just fine for the "Lone Steer Sauce"

I noticed that you live on the west coast of FLA and I think some really great produce comes out of Central Florida all year...round about Ocala and so forth so you should be able to get great tomatoes any time of the year.

Excellent job with everything..The ABT's look great too.
That is definately a corned beef which smokes up nicely but you can soak it in cold water for 8-10 hours changing the water every 2-3 hours and that will get rid of the salt pretty well.
