What to do with Cooked Salami

So my wife came home today with two of these cooked salami chubs for free today. She works for a place that gets close to expiring products dropped off from local supermarkets and we reap the benefit many times. (Also got a bologna chub which I have plans for and about 10 bags of shredded...

First time cleaning my own deer

Congrats on the deer. I grew up with my dad hanging them for a few days after gutting them. Since I have been on my own I have found that I gut, skin, and break them down in one day. Larger pieces in the freezer (vac sealed) that same day. Chunks that I cut up for stew or grind for burger I...

Rolling some smoke on Rainbow and speckled trout

So I see you brine them hole and then split in half. Have you smoked them hole before? Curious which method you prefer and why. They look great.

I have a Camp Chef pellet Smoker and love it. Have had 4 years now and no issues and good cooks on it.

    Containers for brining brisket

I ask my local grocery store for their empty frosting containers. They are food grade and usually give them away or ask for .75 cents for larger ones and .25cents for the smaller ones. I also use these to collect my maple sap and store my wood pellets.

Connecticut Wood supply for offset smoker

I am in Cheshire as well. I use a pellet smoker and have a Drum so don't have an offset for wood. Ironically though my boys have a wood rack in town and sell bundles of hardwood.

    Venison Loin

I have taken them and put my favorite rub on them or just salt, pepper, and garlic powder and wrap in plastic wrap and into the fridge overnight or during the day. Then smoke it to about 120/125 and then on a hot grill for a sear and off at around 130.
