Nice looking smoke Dude. The burgers look yummy. If you did this yesterday, I know what your talking about when you say you had trouble keeping the temps up. I posted my BB's from yesterday and the wind was intense during the smoke. My times were off also, but they turned out great.

Well, I'm going to try my hand at 3 racks of Baby Backs this afternoon for supper tonight. I already have the pesky membranes removed and have Jeff's rub on them and they are in the fridge. Will only be in the fridge for about 4 hours, but that should be ok for my first try.

Thanks for the Q-view CubGuy. Sorry about the roast being dry for you. The fatty looks great and I bet it was tasty. I guess thats what this smoking meat is all about...trial and error. At least now you know you should have pulled it out earlier. I have a ton of stuff to learn about smoking too...
