    I cook my turkeys @ 275 because the lower temp gives good smoke flavor. I don't need crispy skin on turkey but do like crispy skin on chicken. If internal was 160 it was done. Any hotter and the turkey gets dry.

    I do my best to keep the probe at the same level as whatever I am smoking. Never had any luck getting crispy skin on poultry under 325 degrees.

    Thermoworks has a 4 probe RFX that could be used in 4 different locations (I think). I have no experience with the Thermopro RFX. I have a Thermopro TempSpike XR. For the price of a Thermoworks 4 probe RFX I would be close to the price of 4 Thermopro TempSpike XR's and would have 8 probes.

    Sorry for the late reply. I have been offline for a while. I recently smoked a pork butt for 8.5 hours. After the smoke was done the base unit still showed 100% charged and both probes showed abut 70%.

    Sorry for the late reply. Been offline for a while. The base unit and probes were fully charged when I received it. As I mentioned on an earlier post the base unit showed 100% after an 8.5 continuous smoke and the probes showed about 70% for the same smoke.

    Just finished two pork butts to vacuum pack for the freezer. Largest one was 10 pounds. 8.5 hours at 275 degrees and it turned out excellent. Anyone do brisket at 275 degrees?

    And I wear hearing aids which are not recommended to use while sleeping. Long smokes like brisket and pork butt I do overnight. Smoking while awake is good too.

    I have had I have had this set up for years. Still works great. However the alarm sounds on it are so weak I can't hear them and setting up the high/low alarms are much easier on the Thermopro. Not to mention the hassle of the wires on the probes.

    I have a Thermopro TempSpike XR also. It only has two probes but each probe registers both internal and ambient temperature. Not a fan of phone apps either. The Thermpro comes with it's own remote. Controls very user friendly...

    The alarm(s) are another reason I like the Thermopro Tempspike XR. I wear hearing aids and can't hear the Inkbird without them. Wearing hearing aids while sleeping isn't recommended. The Thermopro is plenty loud enough to wake anyone, half deaf or not, from a deep sleep.

    I started out with a Maverick. As far as temp setting the Inkbird, for me anyway, is a lot worse.

I wanted the convenience of the wireless probes but didn't want a remote thermometer that operated from an app. Nothing wrong with apps but I have had bad experiences with them.
