Sausage-chestnut turkey stuffing.
Score, boil, peel chestnuts, put to one side or vac pack. Cook bulk sausage until not pink. Drain fat. Cool. Add chectnuts. Fill cavity of turkey neck space too. Bake/smoke turkey to temp.
Best stuffing ever slathered with gravy or better yet hunters sauce.

You can, but separate the nub from the skin and bone, grab it with gloves, towel, pliers, tool of your choice and ALL of them should come out. The nub is the only place where all the ligaments join together. If they don't, not done yet.

Get a thin plastic place mat or two from WallyWorld. Can be cut down for vac packing (small) or left as is for big bags. Good also for wrapping prior to netting. I use for loin hams ala Cranky Buzzard. Can be washed a lot, dirt cheap, usually can get with a cute picture.
PS where is Cranky now...
When I do sausage, I do both bulk and links most times. Link chorizo, hot Italian, sweet Italian, Polish on a bun with toppings great. All the above in bulk for burgers or crumbled into pasta. Breakfast sausage gets links, patties and bulk for scotch eggs.

No +1 means basically I concur with using. It can be obtained in differing thicknesses and can be separated for smaller thicknesses. It has an extremely high fire retardant rating. I used it on my home built propane with an aluminium interior framed with 2x2's and covered with siding. Works well...
