    You can also experiment with making one of your own. Just smoke a little meat with an experiment. You don't want eight slabs of ribs or turkey to not come out right.

    It's easy to oversmoke a tenderloin. Try using chips rather than chunks (works better for electrics IMO) and use half as much as you think you should.

    Deffinitely use the water pan. You can also experiment with what you put in the water pan. Some people will put marinade or other things in the water pan. Also, if the electric elememt is simply too tempermental, you could remove it and use the smoker as a charcoal smoker.
