    Another option for smoke generation, would be one of those tubes or trays for pellets. A lot of guys on here report excellent success using one in an electric smokers.

    No rack or pan for me. Of course, I'm weird, I use a bacon weave, like it was a fatty. Then glaze it at about 120 or so. No flipping, no moving until I take a pair of spatulas out there to pull it off.

    That looks great. Never thought about turning up the heat at the end. Normally, I cost with oil, rub, and toss it on the smoker to a temp of 165. Will have to try that.
