Just pulled these from the smoker. Butts are odd creatures. The last one I did took almost 20 hours before I finally pulled it. These 2 took only about 7 AND both got done at the same time even though they were on different racks in the smoker. Go figure...

Went out and stuck the meat probe in at around 7:30. I honestly expected it would have to go another 3 or 4 hours. Meat probe said 199. So I came in the house and got a cooler ready and laid out foil to double wrap. Went back out, moved the meat probe just to check another spot, and it said 205...
Awake at 4:30. Smoker temp at 230. I think I'll make some coffee.
Oh, and the outdoor temp is 42. No wind. So the smoker temp didn't change much with the outdoor temp droppin'.
10pm. I opened it to add some apple chips and I'm waiting for it to recover. Smoker temp dropped to about 200. OK, now 10:30 it's up to 220. I think I'm ok.
