First, I'm not a pastrami doer, but I'm fixin' to give it a go.
Saw a post some place that said soak it over night, changing the water twice at even intervals.
Good luck with it and keep us up on how you do.
First, it originated in Chicago.
It's not bad sauce. I have used the Sweet Baby Ray's Honey BBQ Sauce to glaze baby backs and it was very good. I know some comp. folks who use it the same way and have good results.
I do not buy or use KC Masterpiece. Sauce for the masses.
Sauce is subjective. It...
Guess the rationale escapes me. For ribs all you need is rub and smoke, and maybe an occasional spritz of some sort of juice while smoking. Last backs I did had a good coat of rub that developed into a fine bark after a few spritzes of apple juice with "a bit" of Jack in it. Last hour I basted...
SMF has had it's days, all forums seem to cycle through that phase. As Rodney Dangerfield might have said, Oh yeah, it's quiet now! But ya shoulda seen it a while back! I'll tell ya!
It's a WHOLE lot different than when I found it. And I'm serious.
Ultramag did prime a good while back (read year or two), if you do a search it should be there. His was most fine looking. Think he may have done it on his BDS.
You can use a mild abrasive, such as Scotchbrite, or the pot scrubbers they sell, it won't hurt the probe. I've had my Brookstone GrillAlert 4 years.
The thing that kills probes is kinked or sharply bent cable, too much flexing where the wires enter the plug or probe, or plug failure. The probe...
It won't "add moisture". But it sure helps with the bark, as Meowey said.
If you apply the rub and let the meat smoke an hour or so, then spray with apple juice (or your choice), every hour, it will work with the rub as it caramelizes to produce a nice bark that is delicious.
The bark on these...
No pics? I like to see what transpired, but if there are no pics, hey, I believe you. Would one smoker lie to another????
Kingsford is not the best lump, you hit it on the nose about the sparks, popping, etc. Pick up some Best Choice Lump at any store that is supplied by AG. It is Royal Oak...

On my trusty "just now getting seasoned" ECB I drilled a hole in the lid for probe cables to pass through. I run them through the top vent on my GOSM's and through the exhaust holes in the lid of my drums. I am going to drill a hole in the drums near the top for the probes because there is too...
After I get the firebox (16"X16"X20" 1/2" plate), stack and grates in it I'm sure it would be. I'd have to have a forklift to put in the reciever. And extra lights because it would stick out to the rear a good bit.
Guess the other deal is Arrowhead. $25.00 to park. That's just park, not get in...
Trying to keep this bumped up so everyone sees it and can plan to attend!
We want YOU there! Last year was a great time and some good eats were consumed!
If you are interested in attending send me a PM with your email address and I will send you an entry form.
I'm building a stickburner from this little propane tank (114 US Gal. on the tag). It's actually two end bells used making propane tanks welded together. It was made in 1947!!! It is actually larger than it looks. I cyphered the interior measurements and figure about 11 sq. ft. of cooking...
1975 Brinkmann ECB, bought at Bass Pro Shop on sale - $18.00
I'm just now getting it seasoned right.
And the SDS (Silver Drum Smoker) Pineapple model.
And the CharGriller Duo, the best of 3 worlds.
Plus a couple GOSM's, one charcoal, one gas.
And Porky the Pig, "in the makin'"
I smoked 8 lbs. of cheese in the CharGriller Duo. Used 4 Sam's Choice briquets, they are a good bit larger than standard briquets and cheese smoking is the only time I use briquets. Got them lit and laid a small piece of hickory on top for smoke, added another each time the smoke died. This...
