Smoked cheese tastes like a car tailpipe

Yep, Richtee is on it! Too much smoke! Creosote. You want nice thin blue smoke or invisible smoke. You might think you are not getting enough smoke, but if you can smell it you have plenty. It's all in how you regulate your air flow. And different cheeses take smoke flavor at different rates...

    Corned beef/pastrami questions

I did 2 flats, first time trying this. Soaked it 8 hours, changing water & rinsing. That wasn't enough for me, still a bit salty. I have seen posts where it was soaked up to 36 hours, changing water & rinsing. I will go longer next time. I smoked it with apple, fat cap up, no pan, NO FOIL...

    Lead Found in Venison

This article is crap, some dink looking for his 15 minutes of fame. This quote from him says it all - "As a physician, I nearly fell off my chair," he said. "I've been eating this all these years." (30 years by his admission) Let's see.... He's still alive and coherent, able to write this...

    charcoal basket

What PigCicles said! Buy it at Lowe's, etc. Not cheap. You can cut it with good aviation tin snips and a strong hand. Bend it in a vise. Or, if you have a sheetmetal shop disregard the whole thing and go to work. You can see the basket I made in the SFB of my C-G Duo.

    Memphis Shoulder (A Secret Revealed)

Said with a straight face - Dude, there ain't no fig trees in 500 miles of Peculiar, MO. Best I've got is Osage orange (AKA hedge) and black locust. The Osage orange has thorns that are like needles and the black locust has thorns that are 4"-6" long, and LOTS of them. NOT smoking wood, but...

'08 SMF GATHERING - Are you SERIOUS???

Watch for some pics of the location next week. Ultramag & I are going down there this Saturday to shoot pics and evaluate. With all the heavy rain & flooding in the area things might change. We'll see. Truman Lake level comes up fast and the lake spreads. It flooded several campgrounds last...

'08 SMF GATHERING - Are you SERIOUS???

I'm biased, but I'd say they would like it. There are some other places and things that are pretty neat for "after the Gathering", or before. Check out Silver Dollar City online.

    Pulled Pork w/ QVIEW

Oh yeah, that pulled pork looks good! And I know it was. But that smoker is WAY too clean and spiffy looking! It needs more use.

    Seasoning smoker (ECB)

NOPE! Just spray the inside of the ECB with Grilling Pam, fill the firepan and light it, and get away. Let it burn until it dies. If it does not get nice and hot you may need to open the latch on the side door, don't open the door, it usually springs out a bit when unlatched. Put something under...

Yep. Once it settles down it gets with the program! Excellent for searing a SmokyOkie brisket, just need long sleeves or no hair on your arm.

    Which Lump Do You Use?

See if they carry Mexican mesquite lump. That is, without doubt, the HOTTEST burning lump charcoal going. I just got 50 bags (3 kilo bags).

    Which Lump Do You Use?

If you can find it, Ozark Oak is the deal. In Omaha you should be able to get Best Choice Lump which is Associated Wholesale Grocers (Kansas City, KS) own brand. Best Choice is Royal Oak packaged in a generic bag and cheaper, about $4 for 10 lbs. Kingsford is the pits. Pops, sparks, raises h#**

    Memphis Shoulder (A Secret Revealed)

Dang! And I cut those three fig trees down and burned them on the brushpile after the last ice storm! Dang! I hate that! If only I had known.

New pit with wrong ratio's (?) i think

Sounds like your firebox is too large. It does not take a huge firebox to heat a large smoker. 16" x 16" x 24" will do nicely with a 1 1/2" opening all the way across the top into the smoker. The area of your exhaust should closely match the area of your intake. And you need some sort of grate...
