Now that you folks are warmed up you need to git on down to Thibaut Point Park on Truman Lake near Warsaw, MO June 19-22 for the Official SMF Smokin' Roundup (AKA "The Gathering"). and do some serious smokin', eatin', and meet some of the other fine SMF folks.

We will be at Pomme de Terre Lake - smokin' on the SDS Pineapple drum smoker, having "something cool to drink", and thinking about y'all.

I gave up briquets a good while back. I use Best Choice Lump. It is Royal Oak Lump in a different bag and priced a bit cheaper.
The choice is yours. You need to try different things and see what works best for YOU. What I, or others, here like may well be NOT what you like.

I've got the C-G SFB and the door on mine lays flat. Does not seal well, but lays flat.
Forgot about it probably being overcooked. I'd say you are right on the money, they had to eat the evidence.
Last trip down the Okie grilled some steaks and, sure enough, says "I think they may be a little over cooked" when we sat down at the table. Course, as always, they were perfect.
We are offering hats & shirts again this year.

The hot ticket is to vac seal it using a Food Saver and leave it sealed up a couple weeks, really puts the smoke flavor in the cheese. Go easy on the smoke if vac sealing, especially hickory.
