    My pleasure George, yeah the pan makes things really easier and it keeps in all the juicy goodness. I was shocked at how much juice it actually produces. I only put in a 3/4 to a cup of apple juice so all that liquid came from the shoulder, boy it's tasty.

    I agree with the above! I have an Okie Joe similar smoker to yours and I start out with lump charcoal for a base and from there feed it chucks and sticks of wood that I process myself.

    You know I pulled the probes so I really don't know. But 208 will always be my number going forward for sure!!!! I added a little apple juice about a cup to the pan. And yes I put that goodness over that pulled pork it was awesome!!!!

    I've got about 2 cords of seasoned oak and close to another unseasoned drying out. Most of the oak is white, chestnut, and little bit of red oak. I burn it in the winter a little as well!

    George I totally missed that step on seasoning it and letting it cook for a few hours, eeks!! I seasoned it about 2-3 days prior to my smoke. I will def try that corn cob holder trick on the skin, thanks so much for the tip and thanks for the reply much appreciated.
