    I have the next grade up vision and don't see any reason you could not use wood.  It will take you a few times using the Vision to master temp. control, but once you do you can hold a temp for hours.

    The display will show LLL if the center of the meat is below32 degrees, once the temp is above 32 it will show the actual temp.

    Farm raised salmon is an ecological disaster! It is fed antibiotics and hormones, and the great amount of feces that is produced in a confined area kills all live in the area of the raising pens, but the salmon swim in it 24/7. Do not buy farm raised salmon!

    Do a search for smoked kingfish.  There are several excellent recipes for brine for king mackerel as well as recipes for smoked kingfish dip.

    I love smoked kingfish,and make a smoked kingfish dip or spread with it.  I think that smoking yellowtail would be somewhat of a waste.  Search for a recipe for "snapper on the half shell" it is really good.

    Did anyone else see this item advertised?  It is a pork puller that goes on a hand held electric mixer.  Not the Roman one that is for an electric drill.  I saw the announcement of it but can't remember where I saw it.
