Costco pork bellies -- Skin On?

The local Costco in Coeur d”Alene, ID is still selling it skin off. 3.99 lb. And for the first time in a long time they had prime packer briskets, though at $4.99:lb

    Advise From Doc

On the subject of veggie juice... I made another batch of smoked salsa this past weekend. Recipes have been posted on this board by myself and others. Basically, smoke a bunch of tomatoes, some white and red onion, scallions, jalapeños, a few garlic heads, maybe a hatch chili or two, then...

Issues logging into the KCBS website after renewing my membership.

Yep, it's a great benefit. You show up with your KCBS card (I usually print a new one from the website, since I can never find the old one) and I generally bring a copy of the KCBS page showing RD access is a benefit. The customer service desk will issue you a one-day pass right on the spot...

    Massive Curing salt over dose!

Yet another reason that I really hate the Imperial system of measurement. It's such a cobbled-together, anachronistic, illogical collection of measurements.

    Do you refrigerate potatoes?

Cool and dark storage is correct, though I've not heard of home storage in the refrigerator, and I'm from Idaho! But that said, the average kitchen is warmer than optimum. A cool basement, if one is available, is better for any spuds you want to keep more than a couple of weeks.

    Anyone else see the comet?

Nice shots! We looked last night, but there are a LOT of tall pines around here. We would have had to drive aways to get a clear view of the horizon.

    Massaman Crawfish Boil Curry!!!

Wish I lived closer! I'm now back in Idaho, but up in the panhandle. A 10-12 hour drive from where I grew up in southern Idaho. This is a tall state! I remember catching small crawdads in the creeks feeding into the Snake River when I was a kid, but I had no idea the lake lobsters got...

    Northern lights in CO

Can’t help with the trees, but one trick that makes an enormous difference is looking through the camera on your phone, or other digital camera. The low-light capabilities really make the auroras stand out. We weren’t impressed by what we saw with the naked eye, but the digital photos turned...

    Northern lights in CO

From the deck of our new home overlooking Hayden Lake, Idaho. We're way north in the panhandle, so I expect this won't be the last time we see them here. Impressive that this solar storm made them visible as far south as it did.

No wrap, no spritz, when right?

If I'm cooking anything for more than a few hours, I'm using a water pan, and (depending on what I'm smoking) spritz, mop, baste, wrap...things to keep the meat moist. I understand some folks can turn out good BBQ without resorting to such measures, but I like the way the food turns out when I...

    New hard Nitrided CI Pans

They can't think much of their intended customers, if they expect them to believe (as the label states) that the pan has a nitrided coating, and the coating is chemical free.

    What are you watching ?

We recently moved, and Spectrum is the only game in town for internet + TV. We can kinda figure out Spectrum TV, but I agree, the Xumo box (not required, but they give you one free for the first six months) doesn't make things simpler--which is what it is supposed to do. It just adds another...

Beer sales fall to 45 year low

Beer sales declining due to the increased popularity of alcoholic carbonated water? That's just wrong.
