    Those look amazing! Although I have never had any of this quality, but I like to smother the links in BBQ sauce and simmer for a while, then take a cheap white bun, a couple of healthy swipes of mustard, drop a link on and smother with simmering BBQ sauce. Simple pleasures! Rick

    And the small point runs opposite the larger end. Tri Tip is pretty forgiving though. I also like to smoke mine then take up to about 138 with the sear. Still very juicy, and pink color; seems different than other cuts in that regard.

    Could the temp swings be caused by a bad grill probe; the one connected to the controller? I had a similar issue in my pellet grill; the probe was indicating 30-40 degrees higher than actual. Replaced the probe and all is well. Rick
