Ribs would be a great choice as well as a pork loin. Pretty inexpensive way to feed folks. Leftovers are great as well. Very versatile in that you can use it for sandwiches or a fork and knife meal and pair it with any sides you would like. Going to cook in under 3 hours as well.
Going to put a couple cowboy cut ribeyes on the smoker. Thinking about running to the store and picking up a small shoulder to make pulled pork for some pp nacho's.

I would run it in your smoker your 4-5 hours, then put it in the oven at 190 degrees and get a good nights sleep. When I got up I would bump the oven up to 225 and finish it off. Wrap and rest till it was time to pull and eat. I am sure others will have better advice but that's how I would...
This past January 6th was mine. Air temp was -11 in central Indiana not sure what the wind chill was. Wrapped the traeger in a welding blanket and a wool moving blanket and it did a real nice job. The things we will do for family.
A little late on a reply. But at around 190 starting probing till a toothpick will slide in with no resistance. But I think the biggest issue you had was not resting nearly long enough. 2 hrs minimum and 4-5 is even better.

Instead of cooking to a temp of 205. When your therm. is showing 190 start probing with a toothpick or skewer. What your looking for is for it to slide in with little to know resistance. My flats usually finish closer to 195 then 190. Points in the 200 plus range. Give that a try sometime...
It sounds like your about right on your trimming. Kinda disheartening to trim that much off. But when the finished project is right on point you forget all about it. Good luck with your smoke this weekend
