    Welcome to SMF. I personally use alder, cherry and apple. I prefer a milder smoke. Also pecan is excellent. I also enjoy mixing these.

    I would suggest chicken or ribs. If you do chicken, make sure that you brine it first. It makes all the difference.

    ABTs - Boat vs Cone...

    I use the boat and a half of a slice of bacon. I use a good quality thicker cut of bacon. When the bacon is done the pepper is done. Also, I poke 2 or 3 holes in the bottom of the pepper to drain excess grease.

    I use a thicker bacon, so when it is done, the peppers are sure to be done. Mine usually go 2.5 hours at 230.

    I agree with the gloves. I don't handle peppers as often as I would like. They will burn you if you are not used to them.     My ABT's generally take 2-2.5 hours. I must admit that I like my bacon a little bit crispy but not too dark. That is how I judge it, I go by the look of the bacon.
