Thanks, I've been wanting to try these. Last weekend I did a 8-1/2 lb. butt and there was enough lag time to make salmon and a couple of fatties. I think these would be a nice fill-in while waiting for the butt as well.
I'd look around at the local Menards (if you have one in Cali) or Lowes and maybe Home Depot.
You'll save money on the thermometers. $40.00 is a little steep. I got mine at Menards for $13.00 a piece.
You must try that glaze! I mixed it up the previous night and refrigerated it so the flavors could mingle. It thickened up a lot in the fridge, but I left it out on the counter for a couple of hours to get it "brushable" Great stuff!
I brined the fish because I thought the fish would lose...
I tried this glaze this weekend and I can't thank you enough, Dutch. This glaze won me a ton of compliments, so I'd like to tip my hat to you! Excellent glaze, my new favorite way to eat Salmon!
Well, My Sunday started off at about 5:30 am. The previous night, my lovely wife picked up a 8.5 lb. Boston Butt for pulled pork.
I patted the butt, smeared it with yellow mustard and coated it with a top secret rub, wrapped it in Saran wrap and put it in the fridge to sleep until the morning...
Thanks for the compliment. The baffle worked out quite nicely. I was able to slide it a little to tune the temps.
The grate didn't hold up too well, it was pretty thin material... it was really only temporary. I'll be buying or fabricating a basket for the next burn.... I also added the flex...

Just got this smoker about a month ago, I have a whole 2 smokes out of it.
After finding these forums and all the helpful tips on modifications, I made a few and wanted to post some pix.

If you run XP and have trouble resizing photos, here is a link to the image resizer from Microsoft. Once you install the program, find the pic file, right click on it and select resize.....easy as that.
