I use freeze bags ... place the sliced brisket into bags .. bring a pot of water almost to a boil .. turn flame down low .. make sure the bag is sealed and make sure they are freeze bags .. don't use storage bags .. drop them into the hot water and heat it up .. I do the same for the pulled pork...
Opps .. forgot to suggest the reasoning behind my thought! The turkey muscle is breaking down and seeing "tenders" are the most tender part of the bird I would think would be the first to breakdown.

I think you are doing right. I read it all... I have a a question or two ... things to think about.. Do the tenders in all your turkeys turn to mush? If so, I would reduce the time in the brine by 5 days or so .. I think a few days in the brine would work well, I believe...
I make my own rub.. I go through alot of spices..... I have a BBQ restaurant up here and use alot of spices.. I go trough roughly about 40 tons of meat a year so it's best I make my own rubs, sauces (which are bottled and sold) FDA appoved ..

Thanks Ron .... I deboned everything the night before just leaving the legs, thighs and wings intact.... leaving all the skin leaving th skin on as well .. I made an Andoullie Herb stuffing and dabbed it with whole berry cranberry sauce. as you see, it wasn't my 1st .. they are easy to make ...

Details .. huh ... ok .. I made peanut brittle with out the nuts and added the bacon brittle instead of the peanuts ... the brownie I added 2 tbs of bacon fat and 2 tbs of bourbon and crumbled bacon on top .. patted it down and baked it ... the ice cream I candied some bacon ... place the bacon...
It was great too ... that was a #1 seller .. also .. we did a braised pork belly PBLT . ,, and braised pork belly with a pork demi glace' over a bed of grits and pureed parsnips ...Happy you guys like it !
