The first part hit 200 and the second hit 195is, I think it was just to big of a slab of meat at point. But yes, if I had another 30 mins I think it would have been done. You live, you learn.
Thanks for the vote of confidence, and yes I learned a lot. It ended up taking about 9 hours. 6 1/2 in the smoker and the rest in the oven at between 315 and 375. I had wrapped it in butcher paper at 5ish hours and it worked well all the way to include the hour of rest time. It was a success...
As usual, you guys where correct. I hit the stall earlier on at around 150, and it stayed there for a hours. I just threw it in the oven an hour ago and raised the temp to bring it up before resting it. Soon!
With all the advice I am going with 8 hours l, 6 of them unwrapped at 225-260 heat range. So far so good, will post more pics when it is done, happy 4th everyone!
wow, i did not know it was that viariant. I guess i should have specified. My plan is 6 hours, 4 hours open smoke and 2 hours wrapped in butchers paper. maybe i should plan for 7 hours, and 1 hour rest.

That does look cool, I do not have that kind of room in my firebox. That is really cool concept, to bad you got rained on. So you got up too 300 with that type of setup? How much of a difference did the insulating do?

I saw a video on youtube from a guy who used this stuff on his barrel type smoker and he was saying it worked wonders on heat stability and fuel. Hope it works out and please share your outcome!
Ok thanks. With that thought in mind, would it be best to insulate the furthest away part of the cook chamber as possible due to lower temperature range than the side closes to firebox?
