First brisket, point, flat, burnt ends questions

So digging through the archives here I've come across various ways to do a brisket and think I've landed on my recipe. I have a 9.5lb Choice Packer that was given to me by a buddy to do up. I plan on cooking it with a hot and fast method and making burnt ends from the point. Plan is to trim...

    Walleye Tortilla

We absolutely love Walleye. We catch plenty incidentally while fishing for bass and I have buddies that are big time into it. Never a shortage of it in our house. It and Perch are fantastic in tacos.

    Injecting pork butts?

I started injecting, not sure if it really helps or not, but my guests like it. I do just straight apple juice. I also put my Butt in a pan and foil wrap in once the IT hits 150ish and finish like that. I think do my pull and add in rub and drippings from that pan to boost the flavor and...

Scored an 18" WSM, let the learning begin!

Sweet thanks for the link! Yeah I disregard all lid thermometers. I have two Inkbird digital units, a 4 probe and a 6 probe. One will find use on this WSM for temp monitoring. I will need to re-seal the aftermarket thermometer that the previous owner installed, he did a poor job and its semi...

Thanks! I agree haha! Thanks! ROyal Oak is sold out locally so I grabbed some Embers from Home Depot, supposedly according to my research here they are RO seconds. Thanks for the suggestions on the other toys, the guru looks like a very nice piece of equipment to have! Thank you! Yes the...

Scored an 18" WSM, let the learning begin!

So I had always planned on adding a WSM to my arsenal, but couldnt pull the trigger due to price for the time being. I needed a new charcoal grill and decides to get myself a 22" kettle owing to all the rave reviews. I decided to check craigslist on the off chance I could get one cheaper and...

    Prime Rib, just because!

Thanks! Thank you! My mom was freaking out this Christmas about me smoking it, especially since she bought the Prime haha. I had to remind her she loved my Prime the year before and it was smoked too! It turned out great and she calmed down. Funny how that works isnt it? Thanks! Thank you!

    Prime Rib, just because!

With this quarantine I've been digging through the freezer finding things to cook up. So far this week we've had beef chuck short ribs and then amassive tri-tip. I found this prime I always forget I have and figured might as well do it up for some friends! Trimmed the fat cap and silverskin off...

1.25-1.5lbs of 80/20 mixed with an egg, garlic salt, pepper, Worcestershire sauce, dried onion flakes, some garlic powder and kirkland sweet mesquite seasoning. Form into patties, chill, then on the weber until done. Add a thin glaze of sauce when the crust has just started to form on them to...
