    i am most likely not going to be using more than 1 at a time. mostly set it up like that to have more room around the table.

    about the only weather condition i can't cook out there is in heavy rain and high wind. in the winter i usually bring the griddle in.

    no smoke build up to speak of, it is a screened in porch with almost always a breeze.

    so decided to move the griddle next to the grill in the "L" pattern. kept flipping on this or putting them in an "I". the "L" allows the table to be placed so no one is sitting to close to them when their hot. what do you think. forgot to post this at first. here is the view I get to enjoy...

    this year i think i'm going to start getting meats from there to throw in the smoker, might start with kangaroo.

    no now im not sure if it was 1 cup or half a cup. forgot to say it was also soaking in 4 to 8 quarts of water.

    i make my own brine typically 1 cup salt, 1 cup brown sugar, 1/4 cup lemon juice, i think i brined my whole chicken for 10 hours. cooked at 225 for an hour then kicked it up to 275 for the remainder, the cook time was only 2 hours.

    raining here today too, that's why I did it yesterday. didn't decide till Friday, usually did a 12-hour brine. 8 hours worked well.
