Hey guys,
So I used to use a basic el cheapo brinkman smoker box. I got tired of it and upgraded to a Traeger Junior Elite 20. I really liked my first cook on it last week but my food was no where near as smokey. I've noticed that once the traeger is up to temp, smoke stops. I know that's how...
Hey everyone,
I'm fairly new to smoking but this will be my first time doing fish. I caught a nice rainbow trout this morning and I'm wondering if anybody can give me some advice for smoking it?
Now that I've got the correct temperature, I'm noticing that it's all over the place.
I'll get up close to 260 so I close down my bottom vents some and it doesn't do much.
Close the lowers down almost all the way and eventually gets too low.
I'm at 244 right now and I feel like I've been...
Al I went out and moved the therm so that it's hanging just below the meat and abover the water pan.
My temp was at 250 so I closed both bottom vents down halfway and I'm currently down to 246
It's now been about 2 hours since I put the butt on the smoker and I'm only at 207 degrees.
This is my first run with a big piece of meat but usually I can hold 225 pretty well.
I have both top vents open.
Both bottom vents wide open.
Water pan full and boiling.
Also my therm is about an...
Hey everybody I'm smoking my first pork shoulder butt right now. I put the shoulder on at 4A.M.this morning here in Colorado. I forgot to take before pictures but I'll make sure to get the after at least.
The butt has been on for 40 minutes now and I'm just now getting to 200 degrees in my...
I recently bought a vertical brinkmann dual door smoker. I've read many threads about this cheap smoker. Some love it, some hate it. I thought it would be something good for me to learn on.
The previous owner replaced the charcoal basket and water pan with some sort of rectangular pans that...
Thank you all this has been a very informative discussion. I do check it often (every 15 minutes or so) because I'm trying to learn how adjusting the intake and exhaust affects the temp.
I did notice my smoker had snack sticks on the lower grate toward the front that were at 166 IT last night...
I actually bought this exact same thermometer last night and hung it from one of my cooking grates. My biggest issue was being a beginner, I had to keep opening my cooking chamber to view the temp.
