I have been using the Bradley smoker for awhile now but not the Digital.

On the negative side;
It won't crisp up the skin on anything..It just doesn't have the heat.
It does take a little while to figure out how much to leave the top vent open in order to get the right...

Mine came with a belt clip but I almost threw it out with the garbage....it was in the wrap in the box.
You can make one with a small piece of a coat hanger.

If you used it over an open flame/ charcoal pit you probably melted the probe wires and that can be replaced fairly cheaply.
The store were the little lady bought it should be able to get you a new probe.
I did that same thing and got the probe replaced right off the wall display at a kitchen...

If you want to freeze them I recommend blanching them first then freeze them whole using a vaccum seal or zip lock and squeezing as much air out as you can before you freeze them.
When you need em you can thaw and do what ever you want with them.
Just my 2 cents fwiw.

I leave them whole and thread them onto a piece of sewing thread and hang em in a dry spot in the kitchen....you might try bagging them and putting them in the cold room or someplace dry and dark till they dry.
I haven't noticed any loss in heat using this method.
As for growing them ....It's 17...
Whatever works is correct.
Try reducing your red or white wine or apple cidar.
Just cook it down till you have what you need. For example.. try reducing a cup of the liquid of your choice down to about a half of a cup or a quarter of a cup and the flavour will be intensified.

The ones I deleted were of a smoked chicken and a fish and a pork shoulder and they came back lookin all black like they were burned to a crisp and a slight grey colour all over.

Well pepperettes are small pepperoni like sticks. They are about 6-8 inches long and about as thick as your finger.
You can buy them in little packets at a corner store, most of them carry something like them.

I resized them at my end and they didn't improve,but if I understand you correctly you don't have a problem with my pictures being clear when you look at them?
I figured if I couldn't see them clearly then nobody else could either.
I recently tried to put some pics into my album and I ended up deleting them because they look like solarized/polorized /sepia toned semi negative images with no colour saturation.
I left one in there just so anyone can have look to see what I am talking about
