mine runn really steady. At 350 my temp range is 352-360. At 225 it runs a little hotter at 232-241. Here are some screen shots showing temp across three racks. I am ok with these Temps and the amount of swing. This is also with an empty smoker and with the water pan.
I went from a MES 40 to the louisiana grills vertical smoker at Costco. I really like it. It is much bigger then the mes 40 . It us a pellet smoker so you get that ease of use like your mes 30.
I have the louisiana vertical. I got it just over a month ago and like it. It is huge. Best price is at Costco in the store. Paid 449.00 came with a cover it is 599.00 online but free shipping. I upgraded from a mes 40" electric.
They should be the same. Pit boss and Louisiana grills are owed by the same company. I know many of their other grill are the same. I have the louisiana 7 series vertical smoke and it is the same as the pitboss.
