    I've only done a couple butts, but the time element of 1 1/2 hr. per pound of meat is pretty darn close, so a 8lb. butt would take app. 12 hr., I would start it way early or maybe even the day before if possible, just my thought's, hope it turns out good,,,,,,,,

    Dont know about the mayo thing, but I believe you rub the butt with mustard to help hold your favorite rub on the meat, it does help alot as it creates a sticky base on the butt, and you cannot taste the mustard when the pork is done, hope this helps,,,,,,,,,,,,,,

    Homemade Salsa Anyone?

    It really looks good, how did you do the jars, as far as sealing them, my wife did some salsa last year and every jar went bad, she's always made salsa and had no problem until that batch, she still doesn't know what went wrong.

    Do you use foil to "finish" your meat?

    I've done both, it seems if you foil a pork butt at around 160, it doesn't have much for bark on it, maybe I'm doing something wrong, the butt that I didn't foil really looked good (nice bark), and the one I did foil (160) didn't have the bark but tasted very good also, is it just a preference...

    Thanks cowgirl for the advice, my wife and I love crab legs and ribeye's are my favorite steak also, I'm definitely going to give that a try, I love your explanation on how to tell when the legs are ready, that's pretty good :)

    I just did my first pork butt last weekend, about a 9 pounder, and when pulling it, I also noticed that the meat next to the bone was a grayish color, I figured it was because of the bone, but not sure, your's looks great!!!

    Man does this thread bring back memories, my parents and my grandparents would get together for an annual hog butchering, and always remember the liverwurse, I cringed at the stuff that was put in there(I was very young at the time), but was it ever good , havn't had any in years,,,,,,,,,

    I'm going to be doing my first smoke this weekend with my MES, I'm doing about an 8lb. pork butt, been doing alot of research on this and the only thing I'm not real sure about is if people are filling the water tray in the smoker, if someone could help me out, I'd appreciate it,,,, thanks
