    My thought is the baffle keeps firebox end from getting to hot. Tuning plates allow you to direct the heat where needed.

    I had same issue with my Oklahoma Joe. I could add a lot more charcoal and get temps up but would not last very long. I ditched the charcoal basket and started using wood and all is good now.     My Oklahoma Joe Longhorn looks to be very similar to your smoker. I added a temp gauge plus moved them down to grate level (1 on each side of smoker). My smoker is 40" cook chamber I do believe? If yours is smaller may not be a need for 2 temp gauge? I would check the gauge i. Boiling water (212).

    I went with the Oklahoma Joe Longhorn for my home smoker. Done about $60 in mods and am very happy with it. I just did not feel like building one from scratch.

    To me the hardest thing to achieve is keeping pellets lit! Once I started using a hair drying it became 100 times better. You should do a YouTube search on how to lit the AMNPS
