    how clean is clean?

Any grease left in the bottom of the cooking chamber I putty knife out after the unit is cool. I use a wire brush and a damp cloth on the grates. Clean out the fire box (as the ash collects moisture from the air and promotes rust). I have never cleaned, washed, scraped, or scrubbed the inside. I...

    Whats better

Marty welcome to SMF. Look forward to reading your posts and seeing some q-view of your successes. I've always found fruit woods to be better for wild birds tho I've never smoked a pheasant. Let us know how your smoke turns out.

Overnight smoke - Boston Butt & Brisket

Foozer, A lot depends on the equipment (gas vs Charcoal), outside temperature and the consistancy of the heat. I've never done both a brisket and a butt of that size. With a 6# butt and a 4 o'clock deadline, I would start my my fire between 4 and 5 am. I've read that larger pieces of meat can...

I am interested in cold smoking (cheese)

Squeezy posted this early today. Neat idea. I'm going to try some this weekend by resting a few hot coals on some hickory and apple chips. Using just three or four briquetts should keep the temp low enough to cold smoke especially with outside temps in the twenties. Good luck on your smoke!

    The Compassionate Man

A man was sitting in the kitchen, alone, drinking a cup of coffee at three in the morning. Completely lost in thought, he did not notice his wife standing in the doorway puzzled as to why he was sitting in the darkend room. "What are you doing?" she asked timidly very aware of the somber look on...

Suggest a Rub for Pulled Pork Newbie

I like to spread yellow mustard over the meat before adding the rub. The vinagar in the mustard kind of pre-cooks the meat, keeps the rub in place, and I think helps make a better bark. Also, you'll never know the mustard was used. I let it sit overnight in the fridge and take it out when I...

    Smoked Cheese

A neighbor asked if I would smoke some cheese for her. Having never attempted this (but not wanting to walk away from a damsel in distress) I said I would do it. Now I have to figure out how and what kind. I think I will use hickory on my first attempt saving my fruit woods (apple, plumb, and...
