I would agree with AL. Dont bother with the spray it wont make much of any difference. Im also a total no foil guy. When i do a butt i get the smoker up to temp. Put the butt on and dont touch it until it reaches 195+. Simple and easy. Also i would plan 2 hours per lb. It might get done sooner...
250 is not that crazy high over the normal smoking temp. What im not so sure of are all the people that are doing brisket at 300+ and say its turning out good.

Im thinking his pit was a lot hotter then he thought. He said 2 butts at 14 so im guessing they are 7lb each. When i do a butt that size at around 230 it takes closer to 14 hours not 7.
