Can you explain what you are doing/what you did to the ham to make it look the way it does and why you did that? I am not familiar with what the process is here or the end result. Thanks, just curious.
no the ribs will be fine as long as you keep your temps around 225. also just to clairfy 3-2-1 is for spare ribs and 2-2-1 is for back ribs. if you smoked baby backs 3 hrs then foiled for 2 you might have them starting to fall apart at the end of the 5th hour.
i use a rib rack all the time...
i did some ABTs this weekend and used a heavy dusting of magic dust on top of the bacon to give it some kick. worked out great. those ABTs just need more time. i smoke them until the outer bacon tips are getting charred. this way the inside bacon of the wrap is closer to crispy than chewy.
those wings look great. i believe wings are my next smoke. i did a batch of drumsticks for a party this weekend and made a sauce of equal parts sweet baby rays and franks red hot with a little honey on top. i need to try it out on some wings next.
thanks everyone. that sauce is good stuff. i pretty much did a straight up 2-2-1 on these. maybe a little too fall off the bone done but they were good.
you either got spare ribs that needed to be trimmed st louis style if you dont want the skirt or the butcher did a bad job cutting the BBs and left too much of the top side on. one way to tell the difference aside from size of the rack is that the BBs are usually a more uniform length...
