    Proper food handling procedures say to thaw in a tub of water in the fridge. Never in a sink or on the counter with water. I always hated going to those serve-safe classes.

    That's how I do it. Put in overnight at 200*, then wake up about 7-8am and turn up to 250*. I'll have one going in tonight or tomorrow. Except mines a monster at 20lbs (pre-trim), and mostly the point.

    I have a brisket destined for the pb850 Sunday or Monday. I have a couple extra spots available on my wifi/bt temp probe module. I'll try and get 3 readings (left, center, right) and compare with the oem temp probe.

    Are thermometer probes brand-specific?

    I have 2 audio input jacks on my 5.1dts home theater reciever. This is the larger jack in the 1st pic The other Jack is a smaller jack for a normal sized headphone (like an aux jack for car, mp3, iPad, etc-see 2nd pic).
