    My soon-to-be new smoker build

Does it still work? Can it be a refridgerated cold smoker? Would that even work...?

Less is more...TBS...I get it now!

I think my definition of "large chunk" might be off. Large(r) for my small smoker. Probably just about 3.5" long, and maybe 2" diameter. So, I guess one of the larger pieces in the small bag I bought at Home Depot. Thanks to all for the confirmation I'm headed the right way. It's nice to...

Less is more...TBS...I get it now!

Yes! It finally made sense. If the smoke smells unpleasant...well...that's what is flavoring the food. If the smoke is "sweet" and smells great...the food will taste great. Some people mention throwing a piece of lump charcoal into the pan. Does this help keep things going over longer...

Less is more...TBS...I get it now!

I'm still a newbie here, but my decision to buy, and use (properly) a smoker would have been a repeated disaster without this forum. So, first of all, thanks to everyone! What I mean by the title, is my first two smokes, while fairly tasty, just didn't have the flavor I wanted. I felt the...

First attempts at babybacks - Qview

I like it. It has some "kick" to it, so it needs to be applied sparingly if you don't want too much heat. It then goes good with both sweeter and vinegar based sauces if you want to use sauce.

First attempts at babybacks - Qview

I'm using an 85mm f/1.8. I have no rhyme or reason why I chose Canon over Nikon. They're both capable, and have pluses and minuses. The 85mm is my favorite lens and perfect on a full frame. Alright....wife is on her way home...dinner is going to be fantastic...more qview to come!

    Bacon Wrapped Stuffed Pork Loin

First attempts at babybacks - Qview

Alright...they're an hour and half into smoking. I finally got what IMO is the "perfect" smoke on my Brinkman vertical gas smoker. TBS and just smells outstanding! Babyback ribs are the reason I bought a smoker. It's always been my favorite meat to grill over a low heat, and this will...

Chicken Thigh S'Wich - belated Qview

Hah...it's actually a thigh, cut up, and re-heated a bit in the toaster oven. I love avocado...it's a great flavor, not too overpowering. The beer is actually brewed at a local Chicago brewery. Yep...it's a bit dark, and packs quite a punch! I'm a noob and didn't know about the throwdowns...

Chicken Thigh S'Wich - belated Qview

Alright...I was rightfully chastized for asking a few questions, and not posting any Qview from the last two smokes. They both ended late, and stopping to pull out the camera wasn't going to happen with me and the wifey hungry after work. But, one thing I smoked while I was making boneless...

Brinkmann Vertical Gas - some "smoke" Q's

Thanks for all the replies. I'm doing baby back ribs, and throwing some chicken sausage on there since I'll have the space. I think I have a better idea on how it smokes, heats up, etc now that I have 2 under my belt. My last two smokes have been waaaayyy too rushed. I got all afternoon...qview...

Brinkmann Vertical Gas - some "smoke" Q's

I just finished my 2nd smoke in my Brinkmann Vertical gas smoker I bought from Home Depot. The metal is a little thin, as expected for the price, but I really like the 2 doors, and the burner appears to be very effective so far. In short, it's proving to be a great starter unit. I just smoked...

    Lamb ribs

The best lamb rub ever is called "Bicentennial Rub" from Penzey's Spices. I just can't eat lamb any other way since I've had this. Even in high-end restaurants, I get it, or my wife gets it, and we both say, "My lamb is better." http://www.penzeys.com/cgi-bin/penze...entennial.html

    Was my chicken undercooked?

I'm cooking chicken now, and everything I read is that higher temps are needed...at least at the end; to keep it from being rubbery. My plan is to cook it just before proper chicken temp (it will then get there on it's own), and refridgerate it. Then, when we want chicken, give it a good...

    Rookie from Chicago

I'm in Oak Park. Thanks for the response everyone! Well...it's been too busy a week, but I got the smoker out of my trunk, and assembled. I hope to get it seasoned an evening this week, and then a "test smoke" maybe on Sunday. Thanks again!

    Rookie from Chicago

Hello all! I have to first say this forum is fantastic! I've been lurking for a good two weeks now. I have a brother in-law in Austin, TX and have been spoiled during my trips there with good BBQ. I grill all the way through the winters here, and decided I needed to "step it up". I picked up a...
