The rule in our house was always one year, so we made sure it was eaten at that point, and we seldom had problem with freezer burn even w/ butcher paper. Was it in a frost free freezer? That makes a big difference too.
I agree with bubba. Butts (or any other pork I know of ----ham? maybe?) are not hurt a bit by cooking faster. I've cooked them both high and low, and only cook low if I have beef on at the same time.
Heck, that's probably 95% of the beef in any grocery store, anywhere in the US. And, 99.9% of all pork. Hamburger, mostly old tough dairy cows. It's the world we live in.
My prices:
Pork loin chops 2.50 - 2.99 lb
Whole loins 1.50 -3.99 lb
Pork butts 1.29 - 2.99 lb
B backs 3 racks ~ 33...
Boy, haven't seen it done like that in a long time. Thank god for flue cured here. Course, I'm only 27, so it hasn't been that long.
How many acres you grow?
Nice pics!!
Definitely not bigger than 1/4 inch. Smaller than a normal pencil hole. Dads pecan trees have always had these holes in them, and I assumed woodpeckers, but maybe not since I'm pretty sure there are no woodpeckers in my storage building.
I haven't actually seen them, so I don't know what they look like. I've just seen the pile of sawdust.
I did notice my wood is getting very light, it may be hollow now, but I doubt it. I planned to use it anyway.
I think I should change my screen name to screaming ants.
Thanks everybody for...
I got a nice pile of pecan limbs a while back. Most were about as big as your bicep or so, if you don't work out like Arnold anyway.
The smaller stuff 1inch and less has dried and I moved it inside a storage building so it won't get wet/rot. I noticed mounds of sawdust under several pieces...
I second freezing, it comes out tasting like the day it went in. At least 2 weeks later, that's as long as mine has ever lasted.
How much vinegar was in the pork? If a lot, it may yet be fine, but still iffy.
I was at the ECU/VT game in charlotte last weekend. It was hot, and water was $4, and I drank too much beer before the game. So, I could have definitely used one of those. Nice.
I wouldn't call it a waste of money. It is loads better than bricks but it doesn't match up to royal oak. Seems a bit dry, and burns faster for me, but other than that it does work fine.
And yes, it does seem to have tons of small pieces.
