Christmas Beef tenderloin and leftover shaved beef sammies

Had to melt that Swiss in the toaster oven. Always like to use the bagel setting so it only gets hot on top and helps keep the bun from getting too crumbly on the bottom.

Christmas Beef tenderloin and leftover shaved beef sammies

Did a nice beef tenderloin for Christmas dinner and it turned out great!! Had about half the loin left so refrigerated it and then sliced it on my meat slicer fairly thin. Used that on Friday to make beef sammies on toasted onion rolls with Swiss cheese with Horseradish cream sauce, lettuce and...

    I need a new rig!

Any particular features to look for, or to steer clear of? I've only had an MES30 and this MES40 until now, and they were both about the same (electric, tiny wood chip tray, sketchy electronics, etc). And both lasted about as long.

    I need a new rig!

I posted not too long ago about starting to hate my MES40. Well, I guess there was a reason it was misbehaving: it's basically dead now. The cheap a$$ seven segment display has most of the segments out. And now the thing tells me it's heating but it won't even get the chips to smolder. So I...

    Thanksgiving 2024 Throwdown

I guess it's doable, I just have to make sure I get the pics in after I make everything!

Good idea if I had enough people to eat it. 2 weeks in a row.

    Thanksgiving 2024 Throwdown

Well, this sucks. Our family Thanksgiving (the one I get to host) got moved to Monday the 9th to accommodate some people's schedules. Bummer! I will enjoy watching what everyone here submits, good luck everyone! And I'll still post what I'm doing for this Thanksgiving get together afterwards...

    Beginning to hate my MES40

I agree. I too prefer that the flavor of the meat come through first, with a more subtle smokiness. I guess that's what I was trying to convey. I feel that the pellets give a less "authentic" smoke than wood chunks (that I've had elsewhere). But maybe it's my preference because it allowed...

    Beginning to hate my MES40

Where bouts in NW OH? I travel there somewhat frequently; have customers in Toledo, Bryan. IF I might think about trading up/over/whatever to a new rig... Dammit, I wish you wouldn't have posted this. LOL!!

    Beginning to hate my MES40

LOL, my wife would kill me if I actually got rid of it. But don't think I'm not kinda serious about unloading it. Maybe. Someday. I have the AMNPS tube and maze. I find the tube works best on my grill and the maze works best in the smoker. I guess I'll live with that for now, but I like the...

    Beginning to hate my MES40

That was my fear. I'm leaning towards a new rig that I can use charcoal and wood chunks maybe. I do want that true wood fire flavor!

    Beginning to hate my MES40

I get the idea, but it doesn't solve the tiny chip tray issue. Thinking I may be better off with a whole new setup with an auger to feed pellets plus more reliable controller? If one exists for less than thousand$$?

    Beginning to hate my MES40

Every time I smoke my experience gets worse and worse. The way this MES40 is set up is not conducive to productive smoking. The tiny little chip tray holds enough wood to smoke for about 20 minutes. That's a lot of babysitting for a 4-16 hour smoke. (Yes I know I can hook some sort of mod to...

    Smoking a Chuck. Timing question

Yeah thanks, that is a great point. I'm sure I'd be in a hurry and wouldn't have thought of that.

    Smoking a Chuck. Timing question

That's a good point of reference, appreciate it. I've smoked enough to know now not to rely on time (though it took many years to get through my thick skull LOL). Thanks, it hasn't been used in years now. I keep saying I'm going to start back up brewing but life keeps getting in the way. But...
