Update: I tried the steel wool (Brillo, S.O.S) as suggested in this thread and found it to be super-easy and effective. It was just a quick wipe and cleaned right up. It did, indeed, bring the grill probe back in line. It went from widely wrong to just annoyingly wrong.
Thank you, folks!

Yeah, you're probably right...
In my (over-)reseach there were a just a handful of design flaws that kept coming up and fires was one of them. And, the "work-around" was simply keeping them clean - which I did not do.
Now, 600° F is screaming hot and well past the smoke point of a LOT of...
I lose the clips that hold the grill temperature probes close to the grate. I hate using them anyway because for me, they don't work very well. They are flimsy and ill-fitting. Instead, I've found a better solution that works quite well for me.
Many of the regulars have seen this. For me, its...
No kidding, huh?!! Man!! ... Wow!
I've cleaned it once after about a dozen cooks. Since I always use a drip pan, there's never really much grease at the bottom of the pit but maybe some splatter here and there... just mostly ash.
I think it was the reused drip pan which I will now faithfully...
I dunno. Probably in the drip pan I left in there from last cook. I kind of thought (not) that I could just leave it in there and everything would be fine.
I'm thinking I was wrong.

My SmokeFire caught fire today. 🔥
I cranked it up to 600° F and let it run there for 10-15 minutes to bake off the remnants of the last cook. Everything seemed normal until I opened the cover and it just erupted. Which is nice.
It was pretty neat but I have to tell you, there was a bit of a...
Sorry about that quote. It was meant for JckDnls 07.
I'm going to run over to that web page to read the article and I am NOT taking this thing apart!! :emoji_stuck_out_tongue_winking_eye:

Hmph. I didn't think I'd need smoke boost either but I *did* know where to post a question! :emoji_wink:
I did let it settle in before starting the cook for a good half-hour that ought to do it.
I'm going to buy a real thermometer and see what's going on here. I'm starting to think that maybe...
Yeah... I guess you're right... it's not as if I've been grilling for years, you know? Just one season under my belt for maybe a dozen or so cooks for me and my wife.

Yep! The built-in factory thermometer that is nailed to the smoker cover controls the smoker. I read the grill temperature by running the blunt probe through vent in the back and dangling it just above the grate. I then plug the wire from the blunt probe into the control panel next to the other...
Yeah, that's what I thought... just give 'em a call....
I wanted to cook a top round at 225° F but at grate level, the temp bounced between 225-250° when the smoker was set at it's lowest, 200°. I had to drop to SmokeBoost to get the temp I wanted.
Oh, and steel wool for cleaning, huh? I was...
Hey, guys and gals!
My SmokeFire thermometer is off by 30-50° F. But we already know the built-in thermometers are crap, right? The problem is that it's almost impossible to run this smoker low enough for a low and slow cook.
Will cleaning it help or should I just swap it out? If the latter...
This is AMAZING! We've chatted in direct message, which I am grateful for. Thank you for that. But now you have links to flavor bombs!! It is EXACTLY what I am looking for!
This place is amazing! Civilsmoker, you are awesome! Thanks, man! You are making perfect sense to a guy like me who is...
Oh, MAN! My mind has just been BLOWN by the temperature AND time concept. Who knew??
Shouldn't this be a sticky somewhere?? In my 62 years I've never heard of such a thing! Do you know how much sh!tty chicken I've eaten over the years?? Not happy.
But I am happy! I'm finally getting good (and...
