I doubt I will change it, but rest assured I will never change it to Wolf Blitzer

    The great brisket experiment

Looking good so far.  Will be curious how the taste comes out.

    WSM 22.5 ~Question~

Can't speak for the 22.5, but I pulled the trigger on the 18.5 at the end of December.  Everywhere else I looked it was 299, but on aimtofind it was 249 and free shipping.

How do I get the most smoke/flavor in chicken without salt?

I agree with alblancher ... the salt in the brine is what chemically makes it work.  All the other stuff is just additive for flavor.

Question about chips in a foil pouch

You'll likely get many opinions on this, but the purpose of using the foil pouch with chips is so you don't have to soak them.

First Smoke!! Pulled Pork with Qviews

Looks good.  A bit of advice.  Maybe it was the way the pics turned out, but it looks like you didn't put much rub on.  Go ahead and coat that sucker till you can't hardly see any mustard.  It will help create a very nice bark for ya.

    Beer Butt Chicken Questions

I agree with what has been posted so far.  The low-and-slow method is to break down the tougher meats.  Chicken is not a tougher meat, thus you can hotter with your cooking temps.  The added benefit is it gets the skin nice and crispy. Brine or not brine is purely an option.  I tend to not...

    first smoke on the WSM

Thanks for the info.  I might have some expanded metal left over from when I did my ECB mods years ago.  I'll have to look.  If not, I might go with the 2nd grate.

    first smoke on the WSM

I actually didn't put any water in.  I foiled it, then loaded it with playground sand, then put a couple more layers of foil on top. I did just go out and stir the coals a bit and add some more fresh coals.  Within a few minutes the temp was climbing. One question though.  When the charcoal...

    first smoke on the WSM

Doing my first smoke on my new WSM.  Unfortunately it is only 17 degrees out, but I wasn't gonna let that stop me.  Doing beer can chicken on the lower rack and chicken wings on the top rack.  Loaded up 1/2 a ring and then lit about 30 coals in my chimney and dumped em on.  Using some apple...

    Need Advice quick

I would think you could pull it while it is cold.  There are other more experienced people here that will hopefully weigh in though.

    Last weekends Mac 'N Cheese w/ Q-Veiw

Can you give info on how you actually made the mac-n-cheese.  I get the following: 1.  Fried up the bacon 2.  Sauteed the veggies a bit 3.  Made roux from the bacon grease Then did you simply add everything together and bake?  If so, what temp and how long?

Soon to be joining the WSM club

I am actually thinking about just doing a bunch of chicken.  Doing 1 or 2 whole chickens on the lower rack, and a bunch of wings on the top rack.

Soon to be joining the WSM club

I'll have to take a couple of pics before my first use to show you what I am talking about. Regarding it running hot the first couple of times, it has me thinking about doing some chicken for the first cook since I won't mind if it does run a bit hotter.

THE NEW PHONE BOOKS ARE HERE!!!! FedEx delivered this beaut yesterday.  It was easy as hell to set it up.  Grand total of 10minutes with only a flathead screwdriver and a wrench.  This thing is big compared to my ECB. I'm glad I decided to get this size and not the 22".  Looks like there will...

    WSM Mods

Did these holes affect your cooking temps at all?  They seem small enough that it wouldn't, but I figured it couldn't hurt to ask.

Soon to be joining the WSM club

Well, after a few years using my ECB (with mods learned here) it is starting to crap out on me.  I got some unexpected money for Christmas from my grandfather, so I made up my mind to take the plunge and get a WSM.  So then I had to decide whether to get the 18" or the 22".  The ECB was fine for...
