Well I know I have been away a while.
I did get to spend a long weekend on a river in Cherokee N.C. Drinking beer, smoking meat, and sippin some shine. If you haven't had a chance to go to the reservation, do so. Don't forget to stop by Gatlinburg and grab some shine. Go by Sugarlands and help...
Well after identifying the unknown soldier,
A plan was devised....
First I used my sweet brine, for 16 hours. Then coated with spicy brown mustard and pepper.
Smoked lightly at 250f until It hit an IT of 145f.
I cut it in half and the other half is now making a magical transformation...
Sounds like a battle. I find the fight makes for a better cook sometimes, but you will be able to enjoy the picnic more now.
I know that The above mentioned group does lightly sauce their ribs before wrapping. it allows the sauce to soak into the meat.
I bet these ribs will be a home run.
Finish them..... Then wrap in cling wrap tightly and store...
You unwrap tomorow and just grill them and sauce.
Most large scale outfits like Sticky Fingers cooks ribs just a couple nights a week and then just reheats on a grill to serve.
